According to Epson ( here), the method to update drivers is to remove the printer, and then re-add. Sorry for all the text, I just wanted to be clear. Two-Sided is still greyed out (listed as off), and I don't have the "Output Settings" tab like I do with my other iMac. I checked just to be sure my new defaults were saving, and they seem to be. What's also interesting is that back on the CUPS page, under the page for the printer in question, it says this: Defaults: job-sheets=none, none media=na_letter_8.5x11in I tried playing with these in different combinations, but none of them seem to impact the default print drop down menu (from Safari or Pages, whatever). There are several possibly relevant options: "2-sided Printing," (yes/no) which then has a "Binding Edge" drop down just below it with the standard options "Two-Sided Printing," where "long-edge binding" is an option and then a "Duplex Tumble" drop down, which can be switched from "none" to "DuplexNoTumble." Interestingly, under the "Layout" tab within the print dialog box, the Two-Sided Printing check box is always greyed out. On the older iMac (where double sided printing is fine), I have the option to choose the "Output Settings" dropdown within the print dialog box then I can check "Long-Edge Binding" and everything works out. I also have an older iMac, same version of OSX, and it does double-sided just fine. Struggling to enable two-sided printing on a new iMac.
